Since discovering we had it in us to make our own tahini, we’ve been using it in all kinds of ways. Including in the following salad dressing. The warm toasty flavors make your everyday salad so much more satisfying.
It’s a spinoff of the tahini dressing in Kris Carr’s awesomely-fantastic book that everyone-who-won’t-get-prickly-at-her-spunky-and-sometimes-crass-style should read, Crazy Sexy Diet. It’s my favorite.
Tahini Salad Dressing
3 tablespoons tahini
Pinch of salt
Half of a lemon, optional
1. Stir together tahini, 1 tablespoon water, salt and the optional juice of half a lemon.
2. Add more water, a tablespoon at a time, until your desired consistency.
3. Whip with spoon until dressing is light and creamy.
Use less water for a thicker paste that makes a perfect dip for raw veggies.
